I LOVE all things Kodiak Cakes. I love their pancake mix, I love their oatmeal cups, I love their Muffins in a cup. But after having protein pancakes for WAY too many days in a row, I decided to create my own muffins using the pancake mix, and that’s how this recipe was born! I very loosely followed a Kodiak Cakes recipe, and made a bunch of tweaks to make it my own that I can share with all of you! Not only are these muffins super easy to make, but they are also delicious and have a lot less calories and sugar than store-bought muffins! If you are looking for a new component for breakfast or a snack to have throughout the day that’s macro friendly, give these a try.

Ingredients
2 cups Kodiak Cakes Buttermilk protein pancake mix (dry)
1 cup whole milk
½ cup dry old fashioned oats
3 Tbsp chocolate chips
2 Tbsp brown sugar
1/4 tsp vanilla extract
Directions
Preheat oven to 350 degrees.
Mix all ingredients in a bowl together until blended but not smooth. Spoon mixture into lined cupcake baking tray, until each well is about ½-¾ of the way full.
Bake at 350 for 14-16 minutes or until toothpick comes out clean. Enjoy! (Makes: one dozen small muffins)

Substitutions!
Higher cal- add 2 Tbsp peanut butter (for the entire batter) for an additional 31cal, 3g fat, 1.5g carbs, and 1g protein per serving
Lower cal- Swap milk with water for a subtraction of 27cal, 1.5g fat, 2g carbs, and 1.5g protein per serving
